QUICHE Tomato and Basil
Hopefully this is new here.
I made this last night
TOMATO AND BASIL QUICHE 4-11
1 cup all purpose flour
2/3 stick of butter
1 egg yolk
1 tbsp lemon juice
Filling
2 tbsp butter
1 leek, cut into 1/8" slices (white and about 2" of green)
3 eggs
1 1/4 cups of light cream
3/4 cup grated swiss cheese
2 ripe tomatos, cut 3/8" thick slices
3/4 cup chopped fresh basil
1/2 cup chopped fresh parsley
Parmesian cheese
Salt and pepper
Method
Sift flour into bowl, cut in butter add egg yolk and lemon
juice to make a firm dough
Cover, refrigerate 30 minutes
Roll out to fit a 9" (or10) quiche pan and trim edges.
Line inside with grease proof paper, fill with pie weights
(or dry beans) bake at 425 10 minutes, remove paper and weights
and bake additional 5 minutes
OR USE A REFRIGERATED PREPARED PIE DOUGH
Follow direction on package
Filling
Melt butter in pan, add sliced leek, cook till tender (4 minutes)
Combine eggs, cream and cheese in a bowl add leek pour into baked shell
Combine parsely and basil, sprinkle on top of leek mix, place tomatos on top
of mix sprinkle with salt, pepper and grated parmesian cheese...
bake at 375 for 30 minutes...let sit 5 minutes and slice...
