So, here's something to think about when it comes to microwave cooking. Microwaves only heat the food, not the entire oven. They are far more efficient at the task of heating than an oven or a stove. Many green-living websites (and one book I have on my shelf) recommend lowering your carbon footprint and reducing your monthly energy bills by indulging in microwave-only cooking.
Here's a microwave grit recipe, from this site, I recommend sharp white cheddar cheese instead of butter:

2 cups hot water
6 tablespoons grits
1/4 teaspoon salt (optional)
Butter, margarine, or cheese
PREPARATION:
Put water, grits and salt in microwavable bowl that's deep enough so the grits won't flow over. Microwave on high until grits start to boil. Stir. Cook on high for 3-4 mintues stopping to stir occasionally.
If grits is not thin enough add a little hot water and cook a until desired consistency. Stir in cheese of choice, butter,or margarine.
