Oooooh, french toast!
Here's how I do mine....
To make 4 slices:
2 whole eggs + one egg white
splash of milk
1/2 t each of freshly grated nutmeg and cinnamon
1/4 t of pure vanilla extract
Mix all ingredients together very well, "scrambling" the eggs and pour into a pasta bowl or other flat dish with sides. Turn on pan to medium, oil with canola or other mild veg oil (avoid olive oil, it funks the flavor). One pan is warm, place one slice of good whole wheat bread in bowl and shush around for about 3 - 5 seconds, flip and repeat. Lift and shake a bit, to get off drips then transfer to warm skillet. Toast for 2 minutes, then flip (depending on the heat of the pan and your desired darkness). I like to top with honey, S likes brummel & brown and maple syrup.
