Three interviews? What can you learn in three interviews that you can't learn in two? The first to assess an applicant's qualifications; a second to assess an applicant's suitability to the specific job; the third--I don't know, to see if they own more than two wardrobe changes?
Don't get me wrong, congratulations Hunnychile, but three interviews sounds like a terribly inefficient human resources department.
