The eyebrow-raiser on your list for me is The Belgariad. I read that as a teen and really enjoyed it but I wonder if you'll find it too "young adult" to enjoy. Isn't the Shannara Trilogy also aimed at younger readers?
My personal favourite that I can't recommend enough is Joseph Abercrombie's First Law trilogy and its companion book Best Served Cold. These are taut, exciting stories with unconventional characters and magics and are epic without being bogged down by the tropes of the genre.
