Click to Flash, because Flash is a scourge.
Running Snow Leopard, I also like Safari more than Firefox as the java engine is so much faster now. Zooming in and out of google maps no longer feels like dial-up.
And for those with slow MS Office on their macs, make sure your software is up to date. There was one over the fall that made my giant excel spreadsheets actually usable...
