I'm a visual learner. It drives me crazy to talk on the phone because I can't see the person I'm talking to and their expressions, physical reactions, etc., so my phone conversation are super-short when I must have them. It could be that she talks over you to try to compensate for what she can't see that she normally would see in the conversations that you have in person. Maybe she doesn't even realize that she is doing this.
