My wife is gluten free, and from personal experience I can say that "doing without" is better for me than "using substitutes".
She can have poultry, fish, shellfish, leafy vegetables, potatoes, rice, non-cirtus fruits (including tomatoes and other fruit like vegetables).
From this, she can eat a basically mediteranean diet (baring bread), or an asian one (baring wheat noodles and pancakes).
I'd start with grilled seasosned chicken with salad or steamed vegetables, look at seared scallops with a green rissotto, confit of duck with borlotti beans, there's hundreds of things.
Get hold of a copy of Elizabeth David's mediteranean cookbooks and just strike out the ones with the wrong ingredients.
