It's funny, I was worried about that exact same thing when I went out shopping for tvs. The 42" G10 was hooked up to a 1080p source (I think it was some Pixar movie) and I couldn't see any skipping or fluttering. I'm not some TV specialist, but I do sit in front of a computer LCD with a better refresh. When I got home, I checked out a lot of blogs—Engaget, Gizmodo, Cnet, etc.—and a lot of them weren't exactly convinced that the super-high refresh rates could actually be seen by a human eye. Just food for thought.
