I had trouble with omelets too until I got the email that goes around about putting all the ingredients in a ziploc back and putting the bags in boiling water, now I make perfect omelets every time
My thing I can make is meringue, I cant get the stuff to peak no matter what I do....doesnt really matter though I cant stand the stuff lol
