inBOIL nailed it, and you can cook it any way you want to with the skin on, then simply peel the skin off. The skin will come off easily after cooking. OR just eat the flesh from off the skin.
Salmon skin can be something that people will wrinkle their noses at, something about that really oily texture turns people off. As mentioned above, there are both benefits and drawbacks to eating the skin, so eat waht you want.
Of course, you have already paid for the skin in the price per lb of the fish, so... if you want to get your money's worth... eat it.
