You should always eat the skin... the stuff that is best for you -- omega 3 fatty acids -- are all in the skin.
Of course, the fat can also contain all the bad stuff too (mercury, etc.).
That said, pan fry the fillets in a little oil until the skin is crispy. Flip the fish and stick it in a hot oven for a few more minutes until the fish is cooked (not over-cooked).
