Spoiler: I remember The Doctor telling Jack that he was a fixed point in time, so either time actually operates in different planes or is not subject to current human understanding, or it is actually circular in nature.
I think another way of looking at this is in reverse: that Jack has been slowly "un-aging" from his last point on the circular continuum (Face of Bo) and is now beginning to travel on the 2nd half of the arc (beginning the aging process again). Something like a recurrent loop. I know I'm not expressing myself clearly, and my lack of knowledge in physics is showing....
I think Jack's bits and pieces in the old Torchwood site may come up in future episodes (if not already planned, that story arc would be an excellent one for the producers to explore).
Also, Jack regenerated without his special watch.
