I don't have too many sacred cows, but a lot of ethnic ones irritate me. But that's probably because the family members that told a lot of them when I was growing up are people that I avoid at reunions (for personal reasons, not the jokes).
But if the jokes about a specific individual, bring it on, especially if it's funny.
