There are 2 things that spring to mind.
A. Most players have preference settings for default language and subtitles
B. Many discs have default settings for startup
How these settings work togeather can be a lottery. And in the case of PS3 and Xbox they probable "think they know" where you are (regions and timezone settings) and therefore want to decide this for you since they "know" better.
I have taken the view of avoiding everything made by Sony due to their attitude towards the customer/user.
Sony is the brand I have seen the most problems with DVD playback and sadly the PS3 is made by Sony so I'm not optimistic that the PS3 behaves any better than other Sony products.
