One band I'd really recommend is Lacrimosa. Classical music mostly with metal tinges - about half their songs are actually structured like genuine classical (Baroque) instead of just an orchestra/synths replacing guitars found in bands like Therion. I think their album "Echoes" is done entirely in a classical style. Definitely worth checking out.
And now for something completely different - try Impaled Northern Moon Forest." This band is Seth Putnam from Anal Cunt's take on tr00 norwegian black metal. Recorded in a tr00 fashion, this was recorded in a bedroom with a acoustic guitar and someone slapping their knees for the drums. As usual, Putnam continues the tradition for Best. Song. Titles.
