the frou frou la-di-da BLT
let's say you decided to make your own mayo cause you read about it, and now you need something to do with that homemade mayo.
toast up two slices of bread. french baguettes would be awesome, but any bread you got will do. put some of your mayo on the bread. add a bit of pepper.
fry up pancetta. even though it's kinda bacon-esque, i've found frying up pancetta in a bit of olive oil, instead of right in the pan with no oil, makes it fry up a bit better. put the crispy fried pancetta onto the bread.
instead of lettuce, throw down some arugala.
put on your slice of tomato and go to town.
OR
instead of the tomato....fry up some zucchini slices in the drippings left over from the pancetta, and use that instead of tomato.
