If he his married/partnered, I would suggest going in with others on a gift card to a nice restaurant. My father-in-law retired after 27 years teaching and loved this gift. Several of his student's families went in together so the $100 gift wasn't too much of a burden on anyone family.

If you know of a specific hobby he likes (golf, camping, knitting, cars, etc), see if you can get him a gift card toward that hobby.

A lot of teachers love books. If he does like to read, he now has ample time to do it, a gc to a book seller in your city would be good.
