The biggest reason for the draft disparity has to do with the players in the NFL draft generally being ready to play, as opposed to baseball where they usually disappear for several years in the minors.
As for basketball and hockey, it's overall popularity of the sports. The NBA and NHL drafts recently have been getting a major increase in attention and ESPN coverage, though.
Also, the problem with baseball was that until recently the draft was essentially a conference call. Now, though, they are moving to a live draft at MLB Network studios.
That's right: the NFL and NBA drafts are in midtown Manhattan at Radio City Music Hall and Madison Square Garden respectively; the MLB draft will be in Secaucus.
