Almost exactly what I was going to say - we took the kids to the park straight out of bed this morning and made buttermilk/berry pancakes when we got home - yum!
My wife asked me - "did you follow a recipe", knowing fully that there isn't much need:
some self raising flour (not what Americans call it - the one with the baking powder added!)
a little extra bicarbonate of soda (a teaspoonish measure)
a tablespoon or so of caster sugar
one egg
sift the dry ingredients then mix in the egg
add buttermilk till the mixture isn't lumpy anymore, stirring as you go
add frozen blueberries and raspberries
cook in oiled and heated pan!
I can't tell you measurements, because I never measure for things like that.
