I think it's less phallic and more exotic. The monkeys, bananas, island life, etc. gained a lot of popularity in the '50s post WWII as the soldiers from the pacific came back experiencing cultures they didn't know. As they came back, they relayed the stories of the natives and it sparked interest in the fantasies of Americans. Hawaii was never a vacation point until post-WWII, and has exploded since then.
And I say the banana trees are a great excuse to have monkeys in a club. Now if they could put them in tuxes and teach them to deliver drinks... I want to go to a bar like that.
