Welcome, we could use a good bartender around here.
As for doing an inventory of a bar- I usually walk in, look around and see how many small groups of ladies there are and which of those women seem to be be having the most fun, who's wearing a wedding ring... that type of stuff. But I'm sure everyone does it a little different.
