what are your goals? if you want to bulk up and get ripped, then you might want to try "the bodybuilding encycolpedia" by arnold schwarzenegger and some other dude, or "Strength Training Anatomy" by Frederic Delavier. It's very well illustrated and has lots of good info.
Otherwise, if you're looking for general health and fitness books, I'm not really sure.
