..this will take you a couple of days but is worth it...
Take the salmon fillets rub in lots of sea salt and dill (and honey if you like) and sprinkle it with a little brandy...
place the fillets skinside out against each other and wrap the whole thing firmly in a paper...
then you leave it in the fridge for a couple of days turning the package at least twice a day from one side to the other.
After a couple of days you open it wipe away the salt and dill and slice it to thin slices....
put it on a sandwich or in a salad or have it with potatoes or just like that (mustard sauce goes with it well too)...
