Vegetarian chili doesn't have too many ingredients if you use a seasoning packet or purchase a canister of Mexican chili powder (chili powder with cumin). It's also cheaper than chili with meat.
1 medium onion, diced
1 packet chili seasoning or Mexican chili powder to taste (also add garlic if using chili powder)
1 can diced tomatoes
1 can black beans
1 can kidney beans
1 can corn (drained) or 1 cup frozen corn
optional: tomato paste
Saute onion over medium heat with a tablespoon or so of oil. Add seasoning packet once onion is soft. If adding tomato paste, add now. Cook a bit before adding tomatoes, cans of beans and corn. Drain 1 can of the beans if you want a thicker chili. Simmer for half an hour or so to let the flavors come together.
