Bring back the tug-o-war. Seriously.
NEW sports? I like the XC idea, highthief, but I doubt it could fly. Maybe I'm a cynic, though. But what about sailboarding or surfing (tough if the Games come to Chicago)? 3-on-3 hoops would be interesting, especially if it were half-court. Rollerhockey would be cool.
Unfortunately, my guess for a Chicago Games demonstration sport is cornhole.
