Since she's a stray, I'd recommend booking an appointment with the vet. A check-up is probably in order, just to make sure she's doing okay.
When I adopted my cat from the shelter, she hid under the couch for a solid week. Our budding friendship wasn't helped by the fact that she had a mild infection and I had to shove pills down her throat twice a day. She got over it and a little more than a year later I can't get her to leave me alone sometimes.
She still hides when company comes over, though.
Cats do make excellent companions. Much less work than a dog, and they never get too big to curl up in your lap.
