We've had a number of people (including Hispanic's) ask for our recipe, which is very, very easy.
This is really more a queso dip than Nacho cheese, so it all depends on your definition.
1# sharp cheddar
1# Velvetta
1-2 cans rotel tomato's
Up to 1 cup whole cream, as needed.
Combine all but the cream. Melt in microwave. Add cream as needed to get the consistency you want.
You could add precooked ground beef or sausage as your little ole heart desires. We also sometimes have this when I make home made chili.
