During times when hubby was away for long periods, I often ate:
- quesadillas (which have lots of possibilities)
- sandwiches with different fillings
- fruit salad and some cheese or a boiled egg
- pasta with jarred sauce (I always add extra spices and veggies to my sauce, and you can save the rest for later in the week or use it for a homemade pizza)
- 1/2 of whatever the recipe called for (4 chicken breasts? Just use 2 and eat the other for lunch the next day)
- pasta salad with tuna for protein
I love to make lasagna but couldn't eat an entire pan myself, even with leftovers...so on those nights I'd call my friends up for dinner and share. I'm not really much of a cook so I don't have any recipes to actually share...but maybe some of my ideas will be helpful.
