I agree it's hard to cook for one.... and recipes are for 4 usually the norm.
So I cook for 4.
I eat one meal that night, and then another serving within 2-3 days. This accounts for 2 of those 4.
The other 2, I label, date, and freeze. This means that when I come home and I don't feel like cooking. I have something that requires me to either just microwave or stick in the oven.
This can be a simple baked pasta dish.
Make the sauce with meat if you like. Make the pasta. Before it is al dente take out the pasta. (This will allow for the pasta to take in a little more liquid when it bakes and not be mushy.) Put in baking pan (I use the plastic reusable ones and try to use them 4-6 times) cover with cheese. Bake until cheese is melted or golden brown your choice.
For freezing, you can put the cheese and cover with saran wrap and then foil. When reheating remove saran wrap and foil.
