I make them year round, they are very easy to make. And if you want to be lazy sometimes you can use a blender or food processor just do not liquify them. Basically 5 potatoes, 1 egg, 1 onion, salt, black pepper. Some people put in a drop of flour to keep it together, but that is more of an old Hungarian thing, when they had a lot of flour and less potatoes so they added it to make it more filling. Still a tad of flour if you use like 2 eggs for 8 potatoes help keep the latka together (I almost never use flour).
Personally I fry it in 2 different fryers, one with a larger flame then the other. Put it in the one with the larger flame, flip in to the one with the smaller, so it is crispy but not burnt.
