I've had bear and quite enjoyed it. However, with bear, its all in the preparation. Since bears hibernate, they store up lots of energy in the form of fat. Therefore, bear meat is VERY fatty/greasy. Even if you trim away all of the visible fat during butchering, there is still going to be plenty of it in the meat. This means that you must slow roast bear meat, much the way you would a hog, only slower and longer. I also recommend a good barbeque sauce, as the meat will have, even after all that slow roasting, a slight gamey/wild flavor, not unlike that of duck.
I've never heard of bear being used in any sort of sausage or pepperoni. To my mind, it doesn't seem a good meat for that usage.
