I've played with bleach and shirts for a while. I can safely say that YES the bleach DOES weaken the material. But usually it is not enough to worry about. When the shirt is older and wearing out at the seams, you may notice the bleached parts are thinner or have holes.
The shirt idea is solid. A couple of very minor points -
Over time, the fabric die pen areas will be more obvious.
You can't heat set bleach. You need to wash the bleach out of the shirt with water.
