Their information about lutefisk is a bit misleading. You don't actually eat any lye. First, dried fish is soaked in cold water for 5-6 days, then the fish is soaked in a 50% cold water, 50% lye solution for several days, and then it is soaked in just cold water for several days more, with the water being changed daily. The final product isn't caustic at all. It is a bit like fish-flavored Jell-o.
