The average is about 240 days between updates for the iPod line, if you look at the link I and Baraka_Guru both gave to you. Shortest timeframe is about 4 months. No iPod has been the "latest" for more than a year, so if that's what you are waiting for, you will probably be out of luck.
There was a rumor of the resurgence of the Newton (at
AppleInsider); an iPod Touch with a physically-larger screen and full PDA abilities. It is the only logical reason that I've heard for why Apple limited the PDA abilities of the iPod Touch, even though all of those elements were already available on the iPhone.
So, again, I think I'd wait until OS X 10.5 is released, and see if there's any product updates that coincide with it. Expect 10.5 by the end of October.
