For great parodies, Weird Al just can't be beat. His first album was brilliant-- "Another One Rides the Bus" and "My Balogna" are still two of my favorites.
"Livin in the Fridge" was allready mentioned, but worth repeating.
As for non-Weird Al parodies.... hmm. "Pretty Fly for a Jedi" is pretty entertaining.
