Well, certainly it's always going to be a slightly risky activity. But I don't see how using copious amounts of hot water and soap to clean one part of the body from bacteria is going to be significantly less effective than cleaning another body part in the same manner (e.g. the hands, which come into contact with a heck of lot more bacteria than we'd like to think), as long as normal bowel movements are going on (no diarrhea; it had to be said) and there isn't a lot of hair for shit (literally) to get caught on.
And hey, if you really want to try it but don't want to go tongue-to-skin, just do it with a dental dam or saran wrap. I would think that at least with saran wrap, you get some decent sensation of the texture of the ass, without being in direct contact with all the ickies that might be waiting for you. If you decide it's worth the risk after that, then your wife can soap up and get ready for the next step. If not, no big deal... you played it safe, anyway.
BTW: Here's something about the safety of rimming from a doc in San Francisco... says it's basically okay if you wash with soap and warm water beforehand:
