cut up the veggies into chunks
toss with a bit of olive oil if you please
chop up some garlic if you like (garlic powder offends my sensibilities
throw into pan
Put in oven (around 400 degrees, but I also do this in my toaster oven on broil) for about 10 - 15minutes or desired degree of doneness - I like veggies barely cooked.
Toss with some fresh grated parmesan cheese (the stuff in the green can makes me want to hurt people

I will do this for carrots (they take a little longer to cook and if i do carrots, i will add in some thyme as well), zucchini, broccoli, beets (canned are fine and a splash of balsamic vinegar goes nicely with them), eggplant, red or yellow peppers, really any vegetable will do withi this method.
