Being more or less housebound of late, I've had a bit of time to figure these things out. What I've discerned so far:
Normals - are easy. Shoot 'em till they die.
Flyers - ought to be a priority, because you can't slow them down.
Fasts - Like normals, only quicker.
Morphs - Hard to account for, since they change every few seconds. I just treat them like normals too.
Immunes - They're immune to the frost towers, which are otherwise a valuable tool.
Darks - I'm not 100% sure on these ones, but they seem to have some sort of damage reduction. Unupgraded pellet towers don't hurt them and everything else does less than the usual amount of damage.
Groups - Also like normal, only with a mob mentality.
Spawns - Split into smaller creeps when they die. The boss version of these split into spawnlet bosses that split again, meaning that you effectively have to kill the buggers 7 times.
Each wave spawns ten creeps per entrance, excepting the boss levels (so 10 per level on easy and 20 per level on medium and hard). The best strategy for medium seems to be to funnel all the creeps from both doors together and then force them through a maze. Use the pellet towers to start with and start placing the more powerful ones as you can afford them. Squirt towers do well because of their high rate of fire but aren't a total replacement for pellet towers because they're more expensive and because a fully upgraded pellet tower becomes a sniper tower, which does good damage and has the longest range of all your weapons. Bash towers and frost towers are great for slowing the creeps down. Bash towers are best used at corners, or ideally in a sort of u-turn, since they only hurt creeps that are directly adjacent to them. Ink towers are, as far as I've been able to determine, completely useless. Swarm towers zap flyers like mosquitoes in the early levels and should be placed in the center of the grid for best effect; in later levels you'll either need a large number of these or a large number of squirt, pellet and frost towers to help them do their job. Or both, actually. Dart towers are only marginally useful when unupgraded, but a fully upgraded dart tower has the second longest range (next to sniper towers) and does splash damage, which is great when you've choked the creeps into a narrow alley.
My strategy so far has been to start by placing pellet towers to force the creeps coming in from the left over to the top and then funnel the lot of them to the bottom left corner. From there I build the most convoluted maze I can, with a gap in the center to fit a dozen or so swarm towers. I try to make sure I have one swarm tower placed dead center by level 7, since that's when the first wave of fliers shows up. I otherwise build the walls of my maze with pellet towers and replace them with the others as finances allow. This probably isn't the most efficient way of doing it, but it's gotten me to level 40 or so.
