Isn't this something that really you should figure out on your own? I mean, wouldn't the best gift be something that you would only know to give? So if you really like her I'd advise you to think some more about it.
If I were in your shoes the one thing I can think of is to schedule a day in which we would do whatever makes her happy. The caveat being that one must know what would make her happy without having to ask her. Let me rephrase it a little, it would be a day in which I would do whatever pleases her with enthusiasm. I've found that not only do women want you to do what they say, but that performing said action only really counts if you're happy about it.
