Well, they make mint-flavored all sorts of things now--I do believe all of Tylenol Cold's pills come in Mint Burst or some such flavor, and you don't even chew those.
I would presume that the mint flavor makes the pill easier to chew and/or swallow--some medicine has a terrible taste, and chewing it would be hard without the added flavor.
