Another Casserole for Brunch
That does sound good Hank. I'll file that away it sounds like a great brunch. I'm not a huge casserole person, but it does make life easier sometimes.
Medusa, my parents are visiting this weekend and I found/created a recipe. It called for a lot of pre-made food, but I enjoy the actual cooking so I'm making my own potatoes and biscuit mix. But it might be something for you to check out too.
Biscuit Topped Breakfast Casserole
2-3 potatoes (or frozen hash browns)
1 lb of sausage
5 eggs
2 cups of cheese
a small onion
Biscuits (either refrigerated or Bisquick)
1) Heat about a tablespoon of oil in a pan over medium heat. Chop onion and slice potatoes into thin slices. Add the onion to the oil and sautee until translucent then add potatoes. Salt and pepper ot taste and cook until tender (about 10 minutes) stirring occasionally. (Thaw hashbrowns if using the frozen kind.)
2) Cook the sausage thoroughly and crumble.
3) Combine the potatoes, sausage, and cheese in a casserole dish.
4) Beat the eggs and pour over the mixture in the casserole dish.
5) Bake for 25 minutes in a 400 degree oven.
6) Either make biscuit mix according to the Bisquick box or separate refrigerated biscuits and cut into half moons.
7) Take the casserole out of the oven and either drop biscuit mix by small spoonfuls or place the biscuits on top of the egg dish.
8) Bake for an additional 15 minutes or so.
I like dishes like this a bit spicy so I will probably add a bit of tobasco or cayenne pepper to the egg before I pour it over the dish. I can't vouch for how good this is yet, but it sounds yummy.
