OK - I'm assuming that you don't mind a bit of a drive. If there's a radius I need to keep in mind or particulars beyond bath, champagne and a romantic evening, let me know and I'll refine the list.
Blackberry Farms - between Knoxville and Chattanooga. There's horseback riding, the mountains and a fantastic dining room. It's small, but in my opinion the best hotel in the state.
The Cincinnatian - I stayed there for a wedding. I'm not allowed back. I was a bad guest. However, of the little I remember from that weekend, it's beautiful.
The Peabody - If you want to go to Memphis, this is where you should stay. More reputation than anything else IMO though.
The Hyatt in Nashville - really this one only gets top billing because I saw Robert Plant in an elevator on my way to the state cross country meet and he wished me good luck. Otherwise - meh. If you want to go to Nashville, stay at the Gaylord Opryland. It's got the coolest indoor garden ever. Also, the most affordable on my list for the amenities.
