Although you are doing some things right, if this is a typical day, you are not eating a proper diet. If you are anywhere near 1000 calories a day, this is likely placing your body into starvation mode, considering most children under 10 should be eating around 1500 calories a day. The recommended daily intake of calories for most adults range from 2000 to 3000.
A vast majority (over 75%) of your calories are consumed after 12:00 p.m., which may contribute to your problem of not being hungry in the morning. *Breakfast really is the best time to eat because your body has been fasting for over 8 hours in most cases.
Starvation mode means that your body will try its best to keep your metabolism low to prevent unnecessary expenditures of calories. *i.e. it is working against you!
I don't want to rant at you, but you really should see a nutritionist, your diet could use a major overhaul and it would even help you navigate around your iron-sensitive issues as well. I could give you some starter recommendations, but I'm not a certified professional. You need to re-evaluate everything and find more balance.
