HDR is "high dynamic range" and it's not a Nikon thing.
Basically, you take a photo and then bracket it with two or more underexposed and overexposed shots. Then, using software (either PhotoShop CS2 or PhotoMatix) you merge the images together. What you get is shadow areas that aren't so shadowed and bright areas that aren't saturated.
