My black beans are one of my favorite things - and i use the dry to save on sodium and some money too
1 bag of black beans - (drop in a bowl and then add 4 cups of boiling water and let soak overnight)
In a crock pot or a heavy pot add
1 chopped onion
2 -3 jalapeno peppers, seeded and chopped
1 poblano pepper, seeded and chopped
1/2 small can of chipotle peppers in adobo sauce (chopped)
(more or less peppers according to taste)
Add the drained beans to the peppers and onions and cover with water.
Let simmer for hours - in the last hour of cooking add in a handful of cumin, some ground coriander and whatever else strikes your fancy.
Serve over rice (if desired) w/ some sour creamand fresh cilantro (if desired)
I will water this down and have it as a soup for lunch for the week - later in the week it gets even spicier.
