"She's out of your league" means she's too good for you. Think of it as a club with tiered membership. You can't have access to anything above your level, but do have access to anything below it. So if she's out of your league, she's too good for you to be dating or pursuing her, but she can always come down if she's so inclined.
In practical terms, it means that she's unlikely to take an interest in you and you're unlikely to fit into her world. It's not always an accurate statement, though, but not setting your standards unreasonably high, especially when it comes to physical attractiveness, isn't a bad idea.
Then again, I married so far above myself that sometimes I get vertigo if I look down.
