I don't think Claire is really immortal. It seems more likely that she has a ridiculously high regeneration rate. I compare it to the Planeswalkers from MtG. They can reconstruct any part of their body as long as their brains are undamaged. This seems similar to Claire in that she "died" when the stick was logged in her brain.
