For "vanilla" metal, I prefer

Green Carnation (although their 60-minute epic Light of Day, Day of Darkness must be counted as prog)
Black Sabbath
Iron Maiden

If you're going for prog, make sure to check out Pain of Salvation, top-notch Swedish metal
