I would definitely check out Red Rock Canyon park, it has some of the most beautiful scenery you'll ever see. It's only about 20-30 minutes west of the Strip down Charleston Blvd.
As for the weather in December, it can be kind of chilly, with highs in the 50s and 60s and lows often down close to freezing. Rain can happen in December, but it is not too likely as it is the desert of course.
